The Sudanese cuisine is probably one of the most unknown and unfamiliar cuisines around the world – overlooked due to the popularity of other African cuisines from neighbouring countries such as Ethiopia, Egypt and Morocco.
Sudanese cuisine has very distinctive flavours, influenced by cuisines from across the African continent, Middle East and even the Mediterranean. There are a variety of rare plants, spices, fruits and vegetables that are unique to Sudan and add to uniqueness of the Sudanese cuisine. However, to think that Sudan’s cuisine as a whole is unified would be inaccurate with the country’s various vast regions and their rich cultures, each bringing their own twists and tastes to Sudan’s cuisine and food scene.

Co-founded by Mujahed Salah, Al Mufraka Restaurant offers authentic Sudanese cuisine in the old district of Tanker Mai in the heart of Abu Dhabi, the UAE. The 20-seater restaurant offers everything from ta’amiya, ful, a’seeda and mulah to shaya (Sudanese grills) and more.

Founded by Oman-based Sudanese food enthusiast Amr El-Sheikh, DAKWA is a food stand serving the best of the Sudanese cuisine at souqs, flea markets, festivals and events in Oman. Since the beginning of 2018, with DAKWA, El-Sheikh has embarked on a mission to educate non-Sudanese about the rich Sudanese cuisine by attending international festivals and events and serving drinks such as karkade (hibiscus), tabaldi or gongalez (baobab), abreh or helo mur, and food such as agashi, mulah niamia with aseedah, ful (fava beans) and as well as shai laban with legaimat.

Their speciality is sambuxas, commonly known as samosas, which are individually hand wrapped with diverse fillings from sweet to savoury. Their sambuxas have multiple thin layers, adding to the crisp. A unique blend of East African, Caribbean and Middle Eastern heritage, inspires fresh, tasty fillings.
